These wines are made to the cellar as the grapes were gently pressed before fermentation in stainless steel tanks with a percentage going into older French oak barriques, with yeast selected specifically to enhance the wines natural aromatic characters.
Ottawa Life Magazine "Vibrant gooseberry and grassy aromas. Light on its feet but clean, almost shimmers in the glass with fresh tastes of lemon, lime and some tropical fruit on the palate. There's a little green apple creating great acidity and something vegetal on the finish that reminded me of green peppers. Made me think that it would be a nice white wine with a salad nicoise or sushi, a great lunch wine or as a refreshing glass of wine on its own" (2017 Vintage)

The nose is fresh and tightly bound with penetrating aromas of lively pungent passionfruit, lifted herbs and bright floral detail. Dry to taste and medium-bodied, tight and piercing fruit flavours of gooseberries, florals and herbs form a very finely textured, vibrant and energetic line. The mouthfeel has a fresh acid cut and reveals some passionfruit and minerally detail. This is elegant, tightly bound lively Sauvignon Blanc with floral and gooseberry flavours." (2017 Vintage)
