James Halliday Five Star Winery

Ben Moroney "Chapman Grove Wines do have a great reputation"

Global Fine Wines "Medium bodied with a youthful lingering finish"

Jane Master, Master of Wine "A densely coloured wine with cool herbal notes and a supple refreshing palate. It is a blend of 53% Cabernet Sauvignon, 42% Shiraz and 5% Merlot. Over the years, Ron has had a series of Maremma dogs to accompany him around the vineyards. These are a breed of aristocratic looking, large white fluffy sheepdogs from Italy. Ron created the Dreaming Dog label in memory of Millie, Maggie, Big Sam & Bollie."

The Winemaker "This is a blend of 53% cabernet , 42% shiraz ,5% merlot. Lovely rich red-purple colour with fine perfumes on the nose. The wine is full and rich on the palate showing plenty of up-front fruit characters and fine tannins finishing with a good length and balance."

Produced by multi-awarded winery Chapman Grove. Since the first release of wines from Chapman Grove in 2006, its wines have been awarded 4 Trophies, 3 Top Gold, 3 Gold, 8 Silver and 39 Bronze Medals.

Acclaimed Margaret Rivery winery, Chapman Grove Wines is producer of Dreaming Dog wines. Chapman Grove is a small winery focussed on making limited edition fine wines from Margaret River, Western Australia. Described by Australia's N#1 wine critic, James Halliday as "a very successful venture", the winery is known for its highly rated wines and was established in 2005 by an esteemed veteran of the industry, Ron Fraser. Pop Up Wine has secured back vintages of a collection of its highly rated wines.

James Halliday "A very successful venture under the control of CEO Ron Fraser. The wines come from the estate vineyards planted to chardonnay, semillon, sauvignon blanc, shiraz, cabernet sauvignon and merlot. The wines have three price levels: at the bottom end, the standard Chapman Grove range; then the Reserve Range; and, at the top, ultra-premium wines under the Atticus label."

The winery achieved the highly coveted 5 Red Star rating from James Halliday within three short years of first entering the Wine Companion in 2009. Since the release of the Chapman Grove range in 2006, Chapman Grove wines have been awarded 4 Trophies, 3 Top Gold, 3 Gold, 8 Silver and 39 Bronze Medals.

Margaret River is a highly respected wine region in the southwestern corner of Western Australia. Famous for having a more "European" wine style than its counterparts across the country, Margaret River has made its name through its unusually refined Cabernet Sauvignon (often blended with Merlot), gamey Shiraz, intensely citrusy Chardonnay, and refreshingly grassy "SSB'" blends of Sauvignon Blanc and Semillon. Margaret River's winemakers are particularly proud of it's temperate, coastal location – which is very similar to that of Bordeaux.

Cabernet Sauvignon is one of the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

A Cabernet Shiraz blend is a big red wine. Cabernet Sauvignon, is very present up front and in the finish on the palate. In contrast Shiraz comes into its own on the mid-palate. This combination presents wine that includes notes of cassis and blackberry in the Cabernet to smoke and pepper in the Shiraz. Merlot is added to Cabernet Shiraz blends. Merlot and Cabernet Sauvignon form the foundation of many of the great wines of Bordeaux, where the classic blend of Merlot and Cabernet Sauvignon (often dubbed "Bordeaux Blend") is thought to have originated. Together the three varieties can form a powerful wines.
