Grenache noir (50%) Syrah (50%)

This wine comes from parcels selected from the finest terroirs of the southern Rhône Valley Region, extending from Montélimar to Nîmes. The Grenache and Syrah vines are planted on clay-limestone plains which are particularly well exposed and are managed to obtain a yield of around 40 hl/ha.

The grapes are entirely de-stemmed and placed in temperature-controlled vats to macerate for around 18 days during which time only pumping-over operations are carried out. 50% of the wine is aged in vat, and 50% in 450L barrels previously used for 1 or 2 vintages, for a period of 12 months, before being blended with the vat-aged wine.

Originally from Bordeaux, the Lavau family has been involved with winemaking for generations, and have had vineyards ranging from Bordeaux to Tunisia. In 1964 they were seduced by the richness and quality of the Provencal soil, and settled down to make wine in the Rhone Valley.

The cellars of Lavau are currently managed by Benoit and Frederic Lavau, who work in partnership with 350 different grape growers. Benoit is a frequent visitor to Singapore and Pop Up Wine events.

This area's western boundary stretches 2,000 kilometers (1,250mi) across the Australian continent, from the Pacific coast of Queensland to the Southern Ocean coast in South Australia. This vast viticultural "super zone" effectively encompasses every significant Australian wine region outside Western Australia.

Rainforest, mountain ranges, scrubland, desert and dried-up riverbeds occupy the majority land within the South Eastern Australia zone. It is only in cooler, coastal areas that vineyards play any significant role in the landscape. The GI covers the states of New South Wales, Victoria and Tasmania in their entirety, and also the southeastern halves of both Queensland and South Australia.

The Sauvignon Blanc taste is one of the most identifiable in the world of white wines for a few reasons. First, it always has crisp, high acidity. Second, it has a chemical compound called pyrazine which gives grassy, herbal or bell pepper flavors. When grown in cooler climates or picked early, the herbaceous green character is most prominent. South-Eastern Australia is a Geographical Indication (GI) covering the entire southeastern third of Australia. This area's western boundary stretches 2,000 kilometers (1,250mi) across the Australian continent, from the Pacific coast of Queensland to the Southern Ocean coast in South Australia. This vast viticultural "super zone" effectively encompasses every significant Australian wine region outside Western Australia.

Rainforest, mountain ranges, scrubland, desert and dried-up riverbeds occupy the majority land within the South Eastern Australia zone. It is only in cooler, coastal areas that vineyards play any significant role in the landscape. The GI covers the states of New South Wales, Victoria and Tasmania in their entirety, and also the southeastern halves of both Queensland and South Australia.

The Sauvignon Blanc taste is one of the most identifiable in the world of white wines for a few reasons. First, it always has crisp, high acidity. Second, it has a chemical compound called pyrazine which gives grassy, herbal or bell pepper flavors. When grown in cooler climates or picked early, the herbaceous green character is most prominent. In warmer climates or allowed to hang longer on the vine, the pyrazine character diminishes in favor of riper fruit flavors ranging from grapefruit, to passion fruit and guava.

Mike Bennie, Halliday Wine Companion "Succulent with lots of cassis, violet floral lift, mint, eucalyptus and black pepper. Oh yes. This sits on the palate fresh and fine, cinched with lacy tannins and cool with that minty herbal component through a medium-weight flourish of cabernet and a lingering, spicy finish. It nails the variety and delivers it full, albeit with genial restraint and ease of drinking through and through. A wonderful thing to relax into."

Willow Bridge Estate continues to attract acclaim for the relatively newly established wine growing region of Geographe which is located adjacent to its more famous neighbour, Margaret River, in Western Australia. Wine critcs have heralded the winery for producing quality, good value wines. Winemaking is by veteran Western Australian winemaker, Kim Horton.

The Geographe wine growing region is located near the southern end of the Western Australia's Indian Ocean coast, between the emerging Peel region and famous Margaret River – with which its terroir shares several similarities. The best wines grown in this region include fruity Cabernet Sauvignon (often blended with Merlot), gamey Shiraz, rich, citrusy Chardonnay, and grassy 'SSB' blends of Sauvignon Blanc and Semillon. The region's profile is increasing with several Geographe wineries winning national and international awards annually. At the heart of Western Australia's wine industry, the region supplies more than 10% of Western Australia's wine.

Cabernet Sauvignon is one of the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

It is made from the Prosecco grape (renamed Glera in 2009 within the European Union) but denomination rules allow up to 15% of the wine to be other permitted varieties.
