Raymond Chan "The wine is elegant and slender in presentation with a tight core of fruit integrated with fine-grained tannins, and underlying zesty acidity that drives the flavours to a long, lingering black fruited and minerally finish. This is a succulent and firmly concentrated Cabernet Sauvignon with flavours of blackcurrants with herb, leafy and bitter stalk essence elements on a fine-grained palate. Match with herb-marinated lamb and beef dishes over the next 5-6+ years. 100% Cabernet Sauvignon from Coonawarra fermented to 14.6% alc., the wine aged in new and 2 y.o. French oak hogsheads. Full, very dark, deep, black-hued red with slight garnet hues on the edge. This has a taut and tightly bound, slender nose with concentrated and intense aromas of blackcurrants and blackberries, minerals and pungent essence of mint and blackcurrant leaf, unfolding stalk and black ink elements. Medium-bodied the palate has succulent and concentrated flavours of blackcurrants and cassis with essence of bitter herbs and leaf, lending stalkiness." (2015 vintage)

Marty O'Flaherty, Winemaker "The inclusion of the Cabernet into the range was a huge inspiration to me. There is no better region suited to Cabernet than to the climate and rich terra rossa soil of Coonawarra. I love heading down to this region as it’s quite sentimental being that it reminds me so much of the countryside where I grew up in Western Victoria. Adding more sentiment is the fact that the big eucalypts throughout the area seem to leave their indelible mark on the wine itself with the same distinct character coming through, along with a throng of blackcurrant and mint. The pristine little berries we harvest each year gives me the ability to leave these parcels for a vast amount of time on skins, creating a serious amount of texture to compliment the flavour." It is known for the Cabernet Sauvignon wines produced on its "terra rossa" soil. Coonawarra is an Aboriginal word meaning "Honeysuckle". It is about 380 km southeast of Adelaide, close to the border with Victoria.
