Huon Hooke "Bright, medium to full yellow colour. Honeyed mellow-aged bouquet with some straw and silage character typical of Tasmanian chardonnay. There's a hint of greenness in the fruit. The flavour is full and smooth, round and clean, with some obvious sweetness on entry, then a cleaner finish which is reasonably dry and carries a notable acid tang. The acidity is quite shrill and would be too much without that fairly generous dosage. A very good wine, in the final analysis."

Tyson Stelzer "A faint blush tint heralds a blend of great fruit presence of citrus, apple and stone fruits, with partial retention of malic acidity defining a well-honed and energetic finish. Two-and-a-half years on lees has produced integration and mouth filling texture, and an understated savour elegance, topped off eloquently with a low 7.5g/l dosage."

The Winemaker "A soft, pale lemon colour, this exquisite sparkling wine has lively, persistent bead and gentle, creamy mousse. It has attractive, zesty lemon and citrus flavours complemented by ripe melon and white peach flavours. The palate has a long acid line and soft, aged almond kernel and breadcrust characters to add fullness. "

The Tasmanian Cuvée is crafted according to méthod traditionnelle techniques. Fermented in its bottle, this wine is aged on yeast lees for at least two years, ensuring the vivacity and intensity that is the hallmark of Clover Hill.

Clover Hill was established by Taltarni in 1986 with the sole purpose of making a premium sparkling wine. It has 23.9ha of vineyards (chardonnay, pinot noir and pinot meunier) and its sparkling wine quality is excellent, combining finesse with power and length.
