Gary Walsh "Ras el hanout (راس الحانوت) is a spice mix that means ‘head of the shop’, and maybe we have a bull in a shop here, such is the level of exotic spice and perfume pumping out of the glass. In with that, some lavender and vanilla, cherry and redcurrant, a smattering of green herb too. It’s light to medium-bodied, fine emery tannin, juicy raspberry acidity and flavour, inner-mouth perfume and spiced wood aromatic, and a dusty white pepper texture and taste on a cool long finish. Nice and ‘minerally’ too. You have to like them spicy and lithe, and if so, this’ll be close to the top of the shop for you."

Huon Hooke "...a pronounced spicy, peppery aroma, the palate sweet rich and deep in very elegant, classy fruit flavour. The tannins are ample and refined, balanced and the wine is overall delicious. Black pepper, subtle cloves and other spices. It has a core of fruit sweetness that is utterly delicious."

Te Mata Estate is regarded as one of New Zealand’s most important wine producers. Hawke's Bay is located on the east coast of the North Island in and around the cities of Napier, Hastings and Havelock North. The palate has a grainy. slightly chalky texture which allows the generous fruit flavours to build and hold their lines to the long finish. Dry, slightly savoury earthy finish with a trace of vineyard ironstone."

The bouquet is sweetly raspberry-ish and very Eden Valley in style, earthy-spicy also, with a bouquet of dried herbs and dried flowers, especially sage. The wine is deliciously fruit-sweet and almost lush in the mouth, the masses of fine, subtly drying tannins keeping the finish and aftertaste neat and disciplined. A lovely wine, approachable already but certainly built to last and will be better if you can keep your hands off it a few years" (2017 vintage)

James Suckling "This cooler vintage shuffles cabernet to the fore, with leafy redcurrants and red berries, as well as some first-wood tones. The palate is more supple and reflects the influence of shiraz with blackberry and plum flavors set amid quite fleshy texture. A blend of shiraz, cabernet sauvignon, cabernet franc and merlot." Decanter "With a splash of Cabernet Franc and Merlot, Henschke’s twist on a classic Aussie Shiraz-Cabernet has no shortage of interest and layers to its fresh black berry and plum flavours. Keyneton Euphonium is a beautiful composition of shiraz from up to 50-year-old vines growing in the Eden and Barossa Valleys, blended with cabernet sauvignon, merlot and cabernet franc from selected vineyards in both regions. Matured in 20% new and 80% seasoned French oak hogsheads for 18 months prior to blending and bottling.

Henschke is regarded as the best medium-sized red wine producer in Australia. Critic James Halliday describes Henschke's "Hill of Grace" as "second only to Penfolds Grange as Australia's red wine icon". The winery has gone from strength to strength over the past three decades under the guidance of winemaker Stephen and viticulturist Prue Henschke. The red wines fully capitalize on the very old, low-yielding, high-quality vines and are superbly made with sensitive but positive use of new small oak. All Henschke vineyards are farmed biodynamically.

Cabernet Sauvignon is one of the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every wine growing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Château Lynch-Moussas was originally owned by Count Jean-Baptiste Lynch of Ireland in the 18th century. At the time, the estate was much larger than it is today. In fact, the Left Bank estate was so large in those days, it was eventually divided into two parts. Half of the estate gave birth to Chateau Lynch Bages. The remaining portion became Chateau Lynch Moussas. Like Lynch-Bages, it was ranked as a fifth growth in the 1855 Bordeaux classification.

In 1919, Chateau Lynch Moussas was purchased by the Casteja family and its negociant arm, Borie Manoux, which owns numerous other Bordeaux estates in the Medoc and the Right Bank including Chateau Batailley and Chateau Trotte Vieille. At the time of the purchase, they also owned Chateau Duhart-Milon.

Pauillac is a wine-growing region located between Saint-Estèphe and Saint-Julien on Bordeaux's Médoc peninsula (“Left Bank”), is home to some of the world's most famous and expensive red wines, made predominantly from the Cabernet Sauvignon grape variety, which is well suited to the free-draining gravel soils found in Pauillac's vineyards. The stellar reputation of Pauillac wines is based not only on their quality but on their success in international fine wine markets. Three of the top five châteaux in the 1855 Médoc Classification (a ranking of Bordeaux's best wine-producing properties) are located here: Mouton Rothschild, Lafite Rothschild, and Château Latour.

Bordeaux, in the southwest of France, needs little introduction as one of the world's most famous, prestigious, and prolific wine regions. Its three trump cards are diversity, quality, and quantity. The majority of Bordeaux wines (nearly 90 percent of production volume) are the dry, medium- and full-bodied red Bordeaux Blends that established its reputation. The finest (and most expensive) of these come from the great châteaux of the Haut-Médoc and the Right Bank appellations Saint-Émilion and Pomerol. The legendary reds are complemented by high-quality white wines, both dry styles (particularly from Pessac-Léognan) and the sweet, botrytized nectars of Sauternes.

A Bordeaux Blend is any combination of those grape varieties typically used to make the red wines of Bordeaux. Cabernet Sauvignon is widely accepted as a compulsory component of any Bordeaux Blend along with Merlot. In fact, the majority of Bordeaux Blend wines are often made exclusively from a blend of these two varieties. The remaining components are Cabernet Franc, Petit Verdot, and Malbec.

Its colour is bright but not deep, the bouquet more than adequate, the flavours soaring as the wine enters the mouth. The fruit cadences are primarily red, and vibrantly fresh. Superb wine."

Huon Hooke "Lovely balance and texture, and it's already accessible. It will surely age superbly.... Medium to deep red colour with a good tinge of purple. The bouquet is reserved and shy, with a mineral, ironstone quality. The wine is medium-bodied in the mouth with a generous background of tannins, which add a drying, earthy, mineral aspect. It's almost steely in its mineral, iron-filings taste. "

Wine Enthusiast " The palate is powerful yet focused, with taut, spicy, somewhat austere tannins alongside heaps of acidity and chalky texture....The 2017 was a hot vintage in the Hunter Valley and even though alcohol is restrained, the warmth of the season is still felt in this wine. The nose is initially reductive so decant if drinking now. With air, notes of ripe blueberry, cherry, plum, dried rose and peppery spice make their way out."

Its big-selling Hunter Semillon provides the volume to balance the limited quantities of the flagships ILR Semillon and Graveyard Shiraz. Brokenwood purchased the Graveyard Vineyard from Hungerford Hill in '78 and has been working to totally rehabilitate the vineyard over the ensuing decades. It's been a vine by vine exercise, with a degree of experimentation of rootstocks and clonal material from other, even older vineyards. Next, there is a range of wines coming from regions including Beechworth (a major resource is the associated Indigo Vineyard), Orange, Central Ranges, McLaren Vale, Cowra and elsewhere. In 2017 Iain Riggs celebrated his 35th vintage at the helm of Brokenwood, offering a unique mix of winemaking skills, management of diverse business, and an unerring ability to keep Brokenwood's high profile fresh and newsworthy. He has also contributed a great deal to various wine industry organisations."

The Hunter Valley is the best-known and most highly prized wine region in New South Wales. It is known as the region where the Australian wine industry started. The valley's winemakers have pioneered two distinctive styles of wine (oaked Chardonnay and dry Semillon) and has retained a strong connection with both of them. The Hunter Valley's most famous wine style is its distinctive dry Semillon, made there since the 1870s. Hunter Valley Semillons are renowned for their ability to improve with age.

Shiraz, also known as Syrah is a popular red wine. Though the spiritual homeland of this red grape is France, Syrah has been planted throughout the world to great success. It expresses itself differently depending on the climate, soil and regional style.

Syrah is typically bold and full-bodied, with aromatic notes of smoke, black fruit and pepper spice. Stylistically, it can be round and fruity, or dense and tannic. And in warmer New World regions like Australia, Syrah is most often be called Shiraz.

Winemakers who work in cooler-climate growing regions, both in the Old World and New World, tend to call their wines Syrah. The most famous examples come from the northern Rhône Valley of France, notably Hermitage and Côte-Rôtie. In the New World, in regions like Sonoma Coast, California; Yarra Valley, Australia; and parts of Chile, the wines are called Syrah because they emulate the leaner, acid-driven, savory styles of the Old World French classics.

Shiraz tends to come from warmer growing climates, namely the South Australian regions of Barossa, McLaren Vale and Adelaide Hills. Stylistically, these wines are lush, fruit-forward examples that embody the warmer, sunnier climate. Shiraz is so important to Australian viticulture that it is the most planted grape variety in the majority of Australian vineyards and has become virtually synonymous with the country's wine regions, and in particular the Barossa Valley.

Keyneton Euphonium is a beautiful composition of shiraz from up to 50-year-old vines growing in the Eden and Barossa Valleys, blended with cabernet sauvignon, merlot and cabernet franc from selected vineyards in both regions. Matured in 20% new and 80% seasoned French oak hogsheads for 18 months prior to blending and bottling.

Henschke is regarded as the best medium-sized red wine producer in Australia. Critic James Halliday describes Henschke's "Hill of Grace" as "second only to Penfolds Grange as Australia's red wine icon". The winery has gone from strength to strength over the past three decades under the guidance of winemaker Stephen and viticulturist Prue Henschke. The red wines fully capitalize on the very old, low-yielding, high-quality vines and are superbly made with sensitive but positive use of new small oak. All Henschke vineyards are farmed biodynamically.

83% Cabernet Sauvignon 17% Merlot

Château Lynch-Moussas was originally owned by Count Jean-Baptiste Lynch of Ireland in the 18th century. At the time, the estate was much larger than it is today. In fact, the Left Bank estate was so large in those days, it was eventually divided into two parts. Half of the estate gave birth to Chateau Lynch Bages. The remaining portion became Chateau Lynch Moussas. Like Lynch-Bages, it was ranked as a fifth growth in the 1855 Bordeaux classification.

In 1919, Chateau Lynch Moussas was purchased by the Casteja family and its negociant arm, Borie Manoux, which owns numerous other Bordeaux estates in the Medoc and the Right Bank including Chateau Batailley and Chateau Trotte Vieille. At the time of the purchase, they also owned Chateau Duhart-Milon.

Pauillac is a wine-growing region located between Saint-Estèphe and Saint-Julien on Bordeaux's Médoc peninsula (“Left Bank”), is home to some of the world's most famous and expensive red wines, made predominantly from the Cabernet Sauvignon grape variety, which is well suited to the free-draining gravel soils found in Pauillac's vineyards. The stellar reputation of Pauillac wines is based not only on their quality but on their success in international fine wine markets. Three of the top five châteaux in the 1855 Médoc Classification (a ranking of Bordeaux's best wine-producing properties) are located here: Mouton Rothschild, Lafite Rothschild, and Château Latour.

Bordeaux, in the southwest of France, needs little introduction as one of the world's most famous, prestigious, and prolific wine regions. Its three trump cards are diversity, quality, and quantity. The majority of Bordeaux wines (nearly 90 percent of production volume) are the dry, medium- and full-bodied red Bordeaux Blends that established its reputation. The finest (and most expensive) of these come from the great châteaux of the Haut-Médoc and the Right Bank appellations Saint-Émilion and Pomerol. The legendary reds are complemented by high-quality white wines, both dry styles (particularly from Pessac-Léognan) and the sweet, botrytized nectars of Sauternes.

A Bordeaux Blend is any combination of those grape varieties typically used to make the red wines of Bordeaux. Cabernet Sauvignon is widely accepted as a compulsory component of any Bordeaux Blend along with Merlot. In fact, the majority of Bordeaux Blend wines are often made exclusively from a blend of these two varieties. The remaining components are Cabernet Franc, Petit Verdot, and Malbec.

Winemakers who work in cooler-climate growing regions, both in the Old World and New World, tend to call their wines Syrah. The most famous examples come from the northern Rhône Valley of France, notably Hermitage and Côte-Rôtie. In the New World, in regions like Sonoma Coast, California; Yarra Valley, Australia; and parts of Chile, the wines are called Syrah because they emulate the leaner, acid-driven, savory styles of the Old World French classics.

Shiraz tends to come from warmer growing climates, namely the South Australian regions of Barossa, McLaren Vale and Adelaide Hills. Stylistically, these wines are lush, fruit-forward examples that embody the warmer, sunnier climate. Shiraz is so important to Australian viticulture that it is the most planted grape variety in the majority of Australian vineyards and has become virtually synonymous with the country's wine regions, and in particular the Barossa Valley.

Palladian is Fraser Gallop's flagship wine. This 2015 Palladian Cabernet is the finest example of Palladian so far with Cabernet Sauvignon grapes entirely in French Oak barrels from the very beginning with destemming the chilled grapes straight into the new French Oak barrels and fermenting, rolling and plunging then maturing the wine in the same barrels. The wine has definitely taken on an extra dimension and lifted a level with texture and oak integration making the wine more seamless on the palate.

It is medium bodied with scents of dark and red berries, a suggestion of gum leaf, notes of pencil shaving, tobacco, and cedary oak. It is characterized by the wonderful texture that provides a graceful expression of pure, refined Cabernet fruit. The tannins are gentle and unobtrusive; oak is boldly integrated and the fruit is expressive and vibrant. The finish has a persistent fruit core and lingering structural feel, which will allow the wine to open early and age well.

Margaret River is one of the best-known wine regions in Australia, recognized internationally for the quality of its wines and the natural beauty of the region. Although originally renowned for its unusually refined Cabernet Sauvignon and intensely citrusy Chardonnay varieties, the region now produces Semillon Sauvignon Blanc blends and Shiraz.
