NASAA Certified Biodynamic & Organic

James Suckling "Aromas of ripe mulberries and dark cherries, as well as violet flowers, leading to a palate that has a plush, fleshy feel. Plenty of depth and chalky, fine tannins. From biodynamically grown grapes. Drink or hold. Screw cap."

Ned Goodwin MW "Whole berry fermented as is the wont at this address, helping to facilitate the notable culture of minimal additions at the end of it all. Thereafter, 18 months in larger and smaller used French wood. This is delicious maritime cabernet Easy going, mind you. Far from a behemoth, or a wine than needs extensive cellaring. Sage and bay leaf notes, offsetting olive, blackcurrant and other dark fruits. The oak is well nestled, providing a framework rather than a forcefield. Long and succulent."

The Winemaker "Displays tapenade and a hint of hazelnut, with lengthening, proud tannins providing texture and complexity. Finishes with savoury briary tones." (2020 vintage)

Ned Goodwin MW "Harvested by machine in small batches, different triages and with that, varying ripeness levels. Wild fermented with ample whole berries. 12 days on skins. 15 months in part foudre, part seasoned hogsheads. All French. Plenty to like. Currant, red and black. A sheath of crushed mint, graphite and pencil shaving-clad tannins, pliant enough but soft enough, too, to facilitate early access. Pushy length. An easygoing cab with the hallmarks of something considerably more expensive." (2019 vintage)

Amanda Yallop "Deep purple colour, fat blueberries and fallen leaves dominate the nose. Generous texture, sinewy tannins, brambles, fruitcake and red pepper spice line the palate. Full-bodied with a warm, spicy finish" (2019 vintage)

Jane Faulkner "Cassis and blackberries vie for centre stage, it's a brightly fruited wine seasoned with dried herbs, oak spices and plenty of appeal." (2017 vintage)

James Halliday "Harvested in two batches on 29 Feb and 5 Mar, fermented separately for 8 and 27 days respectively, matured in French oak (15% new) for 18 months. Interesting wine. The length of fermentation and the gap between pickings have produced a medium-bodied, savoury wine with just a hint of minty/wintergreen, outweighed by the freshness and cassis flavours of the long palate - all in all, cool climate references." (2016 vintage)

James Button "A lovely, ripe Cabernet displaying a blackcurrant and mint aroma, with plenty of chalky grip on the palate. Dense hedgerow fruits with a leafy edge evolve into meat, violets and mint on the long finish." (2015 vintage)

James Suckling "Super simple cassis fruits, a little earthy, some mocha oak and moderate length. Drink now." (2012 vintage)

Australian Wine Companion "Walter Clappis has been making wine in McLaren Vale for 40 years, and over that time has won innumerable trophies and gold medals, including the prestigious George Mackey Memorial Trophy with his '09 The Hedonist Shiraz, chosen as the best wine exported from Australia that year. Daughter Kimberly and son-in-law James Cooter (both with impressive CVs) support him on the winery floor. The NASAA-certified organic and biodynamic estate plantings of shiraz, cabernet sauvignon, tempranillo and grenache are the cornerstones of the business."

The Hedonist is a NASAA certified organic and biodynamic winery in the heart of South Australia's famous McLaren wine district. Esteemed owner Walter Clappis is Australia's only winemaker to win one of Australia's most prestigious wine awards, The Dan Murphy Trophy, three times. The Hedonist adopts a minimalistic and organic approach to winemaking, prioritising biodynamics and sustainability. The Hedonist is a multi-award winning winery.

The McLaren Vale wine region is located approximately 35 kilomters south of Adelaide. It is by far the most important wine-producing area in the Fleurieu zone and is also regarded very highly throughout Australia and the world. A wide array of grape varieties can be successfully grown here. The best wines come from very old vines, some planted more than 100 years ago. These are prized for producing low yields of extremely concentrated fruit. Shiraz leads the region's list of award-winning wines, making McLaren Vale a favorite place to grow this grape. Cabernet Sauvignon is another prominent grape variety, along with Grenache and Mourvedre, which, together with Shiraz, make up some of the most acclaimed GSM blends here. Chardonnay and Sauvignon Blanc dominate McLaren Vale's white grape varieties, with a plethora of other regional and international specialties such as Merlot, Zinfandel, Tempranillo, Sangiovese and Viognier also making their mark.

Cabernet Sauvignon is one of the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
